Week 4 Trim Healthy Mama – Trimtastic chocolate zucchini cake (S)

I decided to try the Trimtastic Chocolate Zucchini Cake from page 296 this morning.  I made it as mini muffins to make it more fun!  I’m no a huge fan of chocolate.  I like it but usually in small quantities.  It’s amazing that this cake is zucchini based, it’s pretty good and moist.  I put a little too much vanilla in the icing and it has an alcohol taste to it but still good!  Here is a picture before I iced them.  Baked for 10 minutes

Week 4 Trim Healthy Mama – Chicken Marsala

Made with only two modifications.  This is Emeril’s Chicken Marsala and it’s sooooo good, like lick your plate good!!! After the disaster I’ve been in the kitchen today (see previous post), Joe made dinner and I’m so grateful!! He used the THM baking blendto thicken and it was good but it’s texture in this was not right so next time we’ll use something else.

Chicken Marsala

1/2 cup all-purpose flour – (He used the THM baking blend  We’ll try something else next time probably glucomannan.)
1 tablespoon Essence, recipe follows
2 (6 to 8-ounce) boneless, skinless chicken breasts, cut in halves and pounded thin
1 tablespoon olive oil – (used butter)
4 tablespoons butter
3 cups sliced mushrooms (cremini, oyster, shiitake)
3/4 cup Marsala
1 cup chicken stock
Salt and freshly ground black pepper
Chopped chives, for garnish (I leave this off, I’m allergic to chives and onions)

In a shallow bowl or plate combine the flour and Essence and stir to combine thoroughly. Quickly dredge the chicken breast halves in the seasoned flour mixture, shaking to remove any excess flour.

Heat the oil in a large skillet over medium-high heat until very hot but not smoking. Add 1 tablespoon of the butter and cook the chicken breasts until golden brown on both sides, about 3 minutes per side. Transfer to a plate and set aside. Add 1 tablespoon of the remaining butter to the pan and add the mushrooms. Cook, stirring frequently, until mushrooms are golden brown around the edges and have given off their liquid. Add the Marsala wine and bring to a boil, scraping to remove any browned bits from the bottom of the pan. When the wine has reduced by half, add the chicken stock and cook for 3 minutes, or until the sauce has thickened slightly. Lower the heat to medium and return the chicken breasts to the pan and continue to cook until they are cooked through and the sauce has thickened, about 5 to 6 minutes. Swirl in the remaining 2 tablespoons of butter, add salt and pepper, to taste. Garnish with chopped chives and serve immediately.

Essence from Emeril

8 tablespoons paprika
3 tablespoons cayenne
5 tablespoons black pepper, freshly ground
6 tablespoons garlic powder
3 tablespoons onion powder
6 tablespoons salt
2 1?2 tablespoons dried oregano
2 1?2 tablespoons dried thyme

Combine all the ingredients in a mixing bowl.
Blend well.
Can be stored in an airtight container in your spice cabinet for up to 3 months.

Week 4 Trim Healthy Mama – Zapple Crumble (S)

Today I’m a disaster in the kitchen!  I’m not sure what’s up but I am really off my game today.  I decided to try the Zapple Crumble on page 337.  I set out to get my zucchinis seeded and sliced…I cut my finger cutting the zucchini.  It’s so rare that I cut myself in the kitchen, I can’t believe I did this, I’m usually so careful!  It’s not too deep, but is sure bleed a lot.  Once I got my zucchinis sliced I realized I forgot to peel them.  🙁  So I stood peeling slices for what seemed like hours, but I finally got it done.  When Joe came in from working outside he didn’t seem to notice I was peeling slices but I gave myself up.  I told him that I must have been channeling my Mom in the kitchen today.  Now, my Mom was an AMAZING cook!  She could cook anything, but she was always cutting her fingers with the knife.  She probably would not have made the mistake of forgetting to peel the zucchinis before slicing them so I was just referring to the knife cutting my finger part.  I really miss her cooking.  Later when I went to do the dishes I found a paper towel in the sink.  This is something my Mom did all the time and it would drive me crazy to find one of her wet paper towels in the sink.  Now that she’s been in heaven for 2 and a half years I miss finding her paper towels in the sink and would never complain again.  I still miss her so much and had no idea that when I told Joe I was channeling my Mom in the kitchen that I would without realizing it put a paper towel in the sink to find later.  When I saw it, I just stood there and laughed and said out loud, “I love you and miss you Mom!!”

Ok, back to the Zapple Crumble.  I don’t know what I did wrong but it was really watery, but it was good.  Not as good as it would have been if I had used Apples but it was good.  Makes me wonder if I make it again if I added some apple flavor if that would make it better?  I’ll let you know if I try it.

Week 3 Trim Healthy Mama – Baking Blend

I’m running out of THM baking blend so I made my own.  I found this recipe thanks to a facebook group.  I try to keep a link to the source but I can’t find this one.  Thank you Nill for this recipe it’s really great!!  When I find where I got this again I will link it here:

Nill’s Baking Mix

1 cup of Golden Flax meal (100 g)
1 cup of Coconut flour (100 g)
1/3 cup + 1 Tbsp Almond Flour (40 g)
2 cup Oat Fiber (180 g)
1/2 cup + 3 Tbsp Hydrolyzed Collagen (70 g)
2 Tbsp Glucomannan (20 g)

Mix together all ingredients and store in an air right container.  Measures scoop for scoop with the THM Baking Blend.

Week 3 Trim Healthy Mama – Luscious Lemon Cake (S)

So this ends our week of traveling and I didn’t really do well at staying on plan.  I didn’t lose any more weight but I didn’t gain any too.  I’m glad to be home and I’ll get back on plan tomorrow!  I tried the Luscious Lemon Cake on page 289 and YUMMY!!!  I love lemon and this just might be a new favorite treat!  I had it for desert and I can’t wait to eat it again!!!

Well, I decided to have the Luscious Lemon Cake for breakfast.  Not really the best of breakfast, but it was so yummy last night.  I’ve been having a little digestive issues trying to get used to the sweeteners.  I think I’ve determined that I can’t have this much sweet this early in the morning.  I made it with the Gentle Sweet and maybe I need to switch to super sweet.  I don’t know, but the first half of the day was rough.  Other than that I’ve been feeling really amazing!  I have more energy and even my mood is better!  I’m still enjoying no swelling in my ankles and legs!  🙂

Trim Healthy Mama Day – Week 3 – Hello Cheese (FP)

We’re visiting the in-laws this week so I don’t expect to lose any weight this week.  I’ll try to stay on plan as much as possible.

Dairy and I are very good friends!  I love just about anything dairy!  I enjoy a cold glass of milk just about every day, but I’ve slowed down on my milk drinking for this diet.  I haven’t decided if I’m going to give up the milk or not.  Page 97 of the plan book explains why I should give it up.  I think for now, I’m going to continue to enjoy it and when I stop losing weight it will go.

Dairy and I may be good friends, but my husband Joe and dairy don’t get along very well.  So when I saw hello cheese in the cookbook, I was super excited.  If this stuff taste good it opens up dinner to a lot more dishes that I do without for him.
It was super easy to make and gave me a lot of hope!
Well, after trying it we’re both not impressed.  I took it to family dinner night calling it weird cheese.  Everyone tried it but didn’t like the smoky flavor.  Our niece who doesn’t get to eat real cheese loved it.  So, it wasn’t a total lose and we let her have the entire thing.  I’ll try it again, in the near future but without the liquid smoke.

Day 9 – Sugar withdraw

So, I started off slow on cutting out sugar.  I’ve been off sugar for 4 days and yesterday, I thought my head was going to explode!  I had the worst headache, I’ve ever had!  It’s not normal for me to get headaches and I had no idea I would have withdraw symptoms from sugar!  LOL  Today I was researching and realized that is what is happening.  So, I am not going to worry.

On a positive note, I’ve been having some leg swelling for a few years and nothing seems to be causing it.  My doctor has run test and everything is normal. That swelling has been gone for a few days!!!  I can’t stop looking at my ankles and how small they look!!!!
